Oh my stars!


An absolutely DELICIOUS use of my gargantuan zucchini! Now this zucchini cake is really good. But dang if this frosting doesn't make it waaaaaaay better! If you love the flavor of butterscotch as much as I do, you'll LOVE this frosting!

I also found a very yummy zucchini casserole and it's easy peasy lemon squeezy. Now mind you, neither this nor the cake quite fit in the "low fat" range but hey, it has a vegetable in it so that's good, right? :-)

    that's a lot of yummy looking chocolate on top. I read zucchini and thought, no, way that's cake. never heard of such a thing!
